Loaded Potato-Barbecue Chicken Casserole

Ingredients

  • 10 slices bacon, chopped
  • 1½ lb boneless, skinless chicken breasts
  • 1 (9-oz) pkg mashed potatoes
  • 1 cup barbecue sauce
  • 1 cup shredded Cheddar cheese

Instructions

  1. Preheat oven to 400°F. Cook bacon in a large skillet over medium heat until crisp; drain, reserving 2 Tbsp drippings in skillet.
  2. Cut chicken into bite-size pieces. Cook chicken in hot drippings in skillet over medium heat until done.
  3. Meanwhile, prepare potatoes according to package directions. Spread potatoes in a greased 13- x 9-inch baking dish; top with chicken, barbecue sauce, cheese, and bacon.
  4. Bake 20 minutes or until thoroughly heated.

Side Dish Ingredients

  • 1½ lb green beans, trimmed
  • 3 Tbsp canola or vegetable oil
  • ¾ tsp garlic powder
  • ½ tsp salt
  • ½ tsp pepper

Side Dish Instructions

  1. Preheat oven to 450°F. Toss together all ingredients on a large rimmed baking sheet; spread in a single layer. Roast 12 to 15 minutes or until beans are tender and browned.
