Maple-Herb Pork Chops
Chive Baked Potatoes and Green Beans
Ingredients
- 1 Tbsp maple syrup
- 1 Tbsp chopped fresh chives
- ½ Tbsp apple cider vinegar
- 1 tsp Dijon mustard
- 1 clove garlic, minced
- 2 (6-oz) boneless pork loin chops
- ⅛ tsp salt
- ⅛ tsp pepper
- 1 tsp olive oil
Instructions
- Whisk together syrup, chives, vinegar, mustard, and garlic. Brush syrup mixture on both sides of pork. Sprinkle with salt and pepper.
- Cook pork in hot oil in a skillet over medium-high heat 5 to 7 minutes per side or until done.
Side Dish Ingredients
- 2 small russet potatoes
- 1 Tbsp butter
- 1 Tbsp chopped fresh chives
- ¼ tsp salt, divided
- ¼ tsp pepper, divided
- 2 Tbsp plain whole-milk yogurt
- 1 (12-oz) pkg green beans
Side Dish Instructions
- Prick each potato several times with a fork. Microwave at HIGH 5 minutes, and turn potatoes. Microwave 5 to 10 minutes longer or until potatoes are tender.
- Cut a lengthwise slit in each potato. Top with butter, chives, ⅛ tsp each salt and pepper, and yogurt.
- Meanwhile, cook beans according to package directions. Sprinkle with ⅛ tsp each salt and pepper.
