Asian-Inspired Nachos

Ingredients

  • 4 oz wonton wrappers
  • ½ lb ground pork (or use ground chicken or ground beef)
  • ⅔ cup frozen shelled edamame
  • ⅓ cup shredded carrots
  • ⅓ cup sesame sauce
  • 1 Tbsp low-sodium soy sauce
  • 1 Tbsp sesame seeds
  • 1 green onion, sliced

Instructions

  1. Preheat oven to 400°F. Cut wonton wrappers in half diagonally to make triangles.
  2. Arrange triangles in single layer on a parchment paper-lined baking sheet. Bake, without turning, 6 minutes or until lightly browned and crisp. Remove to a wire rack.
  3. Meanwhile, cook pork in a nonstick skillet coated with cooking spray over medium-high heat 5 minutes. Add edamame and carrots; cook 6 minutes or until tender. Add sesame sauce and soy sauce; cook 2 minutes or until thoroughly heated.
  4. Divide wontons between 2 plates. Top with pork mixture; sprinkle with sesame seeds and onion.
