Creamy Tuscan Chicken

Ingredients

  • ⅓ cup chopped onion
  • 3 Tbsp olive oil
  • 3 Tbsp butter, melted
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 2 Tbsp thinly sliced sun-dried tomatoes in oil
  • 2 oz cream cheese, softened
  • ½ cup freshly grated Parmesan cheese
  • 3 cups spinach leaves
  • ½ tsp salt
  • ¼ tsp pepper
  • 3 cups chopped rotisserie chicken

Instructions

  1. Cook onion in hot oil and melted butter in a large skillet over medium heat 3 minutes or until tender. Add garlic, stirring until fragrant.
  2. Add cream, broth, tomatoes, and cream cheese. Bring to a boil, whisking often; reduce heat to low, and simmer 10 to 15 minutes or until thick and creamy.
  3. Stir in Parmesan and spinach, whisking until spinach is wilted. Sprinkle with salt and pepper. Stir in chicken. Serve over Herbed Zoodles recipe.

  • 2 (10-oz) pkg zucchini noodles
  • 3 Tbsp olive oil
  • 2 Tbsp chopped fresh parsley
  • 1 tsp garlic salt

Side Dish Instructions

  1. Cook zucchini in hot oil in a large skillet over medium-high heat, stirring often, 2 to 3 minutes or just until thoroughly heated. Toss with parsley and garlic salt.
