Creamy Tuscan Chicken

Ingredients
- ⅓ cup chopped onion
- 3 Tbsp olive oil
- 3 Tbsp butter, melted
- 2 cloves garlic, minced
- 1 cup heavy cream
- 1 cup chicken broth
- 2 Tbsp thinly sliced sun-dried tomatoes in oil
- 2 oz cream cheese, softened
- ½ cup freshly grated Parmesan cheese
- 3 cups spinach leaves
- ½ tsp salt
- ¼ tsp pepper
- 3 cups chopped rotisserie chicken
Instructions
- Cook onion in hot oil and melted butter in a large skillet over medium heat 3 minutes or until tender. Add garlic, stirring until fragrant.
- Add cream, broth, tomatoes, and cream cheese. Bring to a boil, whisking often; reduce heat to low, and simmer 10 to 15 minutes or until thick and creamy.
- Stir in Parmesan and spinach, whisking until spinach is wilted. Sprinkle with salt and pepper. Stir in chicken. Serve over Herbed Zoodles recipe.

- 2 (10-oz) pkg zucchini noodles
- 3 Tbsp olive oil
- 2 Tbsp chopped fresh parsley
- 1 tsp garlic salt
Side Dish Instructions
- Cook zucchini in hot oil in a large skillet over medium-high heat, stirring often, 2 to 3 minutes or just until thoroughly heated. Toss with parsley and garlic salt.
