Rosemary-Garlic Pork Medallions

Ingredients

  • 4 Tbsp olive oil
  • ¼ cup melted butter
  • 2 Tbsp chopped fresh rosemary (or use 2 Tbsp dried crushed rosemary)
  • 4 cloves garlic, minced
  • ½ tsp salt
  • ½ tsp pepper
  • 2 (1-lb) pork tenderloins, cut into ¾-inch slices

Instructions

  1. Preheat grill or grill pan to medium-high heat.
  2. Combine oil, butter, rosemary, garlic, salt, and pepper; rub all over pork.
  3. Grill pork 1 to 2 minutes per side or until a meat thermometer inserted in center reads 145°F. Sprinkle with additional rosemary, if desired.

Side Dish Ingredients

  • 2 carrots
  • 1 (11-oz) pkg baby spinach
  • ½ cup crumbled feta cheese
  • ½ cup olive oil vinaigrette

Side Dish Instructions

  1. Shave carrots into thin ribbons using a vegetable peeler. Toss together carrots and remaining ingredients in a bowl.
