Rosemary-Garlic Pork Medallions
Shaved Carrot Salad
Ingredients
- 4 Tbsp olive oil
- ¼ cup melted butter
- 2 Tbsp chopped fresh rosemary (or use 2 Tbsp dried crushed rosemary)
- 4 cloves garlic, minced
- ½ tsp salt
- ½ tsp pepper
- 2 (1-lb) pork tenderloins, cut into ¾-inch slices
Instructions
- Preheat grill or grill pan to medium-high heat.
- Combine oil, butter, rosemary, garlic, salt, and pepper; rub all over pork.
- Grill pork 1 to 2 minutes per side or until a meat thermometer inserted in center reads 145°F. Sprinkle with additional rosemary, if desired.
Side Dish Ingredients
- 2 carrots
- 1 (11-oz) pkg baby spinach
- ½ cup crumbled feta cheese
- ½ cup olive oil vinaigrette
Side Dish Instructions
- Shave carrots into thin ribbons using a vegetable peeler. Toss together carrots and remaining ingredients in a bowl.
