Sheet Pan Pork Chop Dinner
Mixed Greens, Pear, and Walnut Salad

Ingredients
- 1¼ lb bone-in pork chops
- 2 (8-oz) pkg whole baby portobello mushrooms
- 3 Tbsp olive oil, divided
- 1 Tbsp chopped fresh rosemary
- ½ tsp salt, divided
- 2 cloves garlic, thinly sliced
- ½ lb Broccolini, trimmed (or use broccoli spears)
Instructions
- Preheat oven to 450°F. Arrange pork and mushrooms on a large greased rimmed baking sheet. Drizzle with 2 Tbsp oil; sprinkle with rosemary, ¼ tsp salt, and garlic. Bake 10 minutes.
- Add Broccolini to pan; drizzle with 1 Tbsp oil, and sprinkle with ¼ tsp salt; toss. Bake 10 minutes longer or until pork is done.
Side Dish Ingredients
- 1 (5-oz) pkg mixed baby greens
- 1 small pear, cored and sliced
- ½ cup chopped walnuts
- 3 Tbsp refrigerated balsamic vinaigrette

- Combine all ingredients in a medium bowl.
