Ingredients

  • 1 (16-oz) pkg gnocchi
  • 1 pint grape tomatoes
  • 1 Tbsp olive oil
  • 1 tsp minced garlic
  • ½ (24-oz) jar marinara sauce
  • 1 Tbsp balsamic vinegar
  • 1 (0.5-oz) pkg fresh basil, coarsely chopped
  • 1 (8-oz) pkg fresh mozzarella cheese pearls

Instructions

  1. Preheat oven to 450°F. Cook gnocchi according to package directions; drain and keep warm.
  2. Meanwhile, cook tomatoes in hot oil in a saucepan over medium heat 5 minutes or until tomatoes begin to burst. Add garlic; cook 30 seconds. Stir in marinara sauce, vinegar, gnocchi, and basil.
  3. Spoon half of mixture into a greased 9-inch baking dish; top with half of mozzarella. Repeat layers once.
  4. Bake 10 minutes or until cheese melts.

  • 1 Tbsp olive oil
  • ¼ tsp Dijon mustard
  • ¼ tsp minced garlic
  • ⅛ tsp salt
  • ⅛ tsp pepper
  • ½ (10-oz) pkg chopped romaine lettuce

Side Dish Instructions

  1. Whisk together lemon juice, oil, mustard, garlic, salt, and pepper in a medium-size bowl. Add lettuce; toss.
