Garlic Sweet Potato Fries

Ingredients
- 1 (8-oz) New York strip steak, trimmed
- ⅛ tsp salt
- ⅛ tsp pepper
- 1½ tsp olive oil
- ½ shallot, finely minced
- 1 tsp red wine vinegar
- ¾ tsp lemon juice
- 1 Tbsp butter
- 2 tsp chopped fresh parsley
- 2 tsp fresh thyme leaves
Instructions
- Sprinkle steak with salt and pepper. Cook in hot oil in a cast-iron or nonstick skillet over medium-high heat 4 minutes per side or to desired doneness. Remove from skillet.
- Cook shallot, vinegar, and lemon juice in skillet 3 to 4 minutes or until shallots are tender. Stir in butter, parsley, and thyme; cook 1 to 2 minutes or until butter melts.
- Slice steak across the grain; spoon butter sauce over steaks.

- 1 large sweet potato, cut into ¼-inch-thick pieces
- ½ Tbsp cornstarch
- ¼ tsp salt
- 2 Tbsp olive oil
- 1 tsp Italian seasoning
- 1 clove garlic, pressed
Side Dish Instructions
- Preheat oven to 425°F. Line a rimmed baking sheet with parchment paper.
- Toss potato with cornstarch and salt. Drizzle potato with oil; toss to coat.
- Spread on prepared pan in a single layer. Bake 20 minutes; turn fries over, and bake 10 minutes or until crispy.
- Toss with Italian seasoning and garlic while still hot.
