Bacon-Brown Sugar Pork Tenderloin
Mashed Potatoes and Broccoli
Ingredients
- ¼ cup packed brown sugar
- 3 Tbsp Dijon mustard
- 1 tsp garlic salt
- 2 (1-lb) pork tenderloins, trimmed
- 10 slices bacon
Instructions
- Preheat oven to 425°F. Stir together brown sugar, Dijon, and garlic salt; rub all over pork. Wrap bacon around pork.
- Cook wrapped pork in a large oven-safe skillet over medium-high heat 3 to 4 minutes per side or until bacon begins to brown.
- Transfer skillet to oven, and bake 10 to 12 minutes or until a thermometer registers 145°F. Let stand 5 minutes before slicing.

- 2 (12-oz) pkg broccoli florets
- 2 Tbsp olive oil
- 1 (32-oz) carton refrigerated mashed potatoes
Side Dish Instructions
- Preheat oven to 425°F. Toss broccoli with oil on a rimmed baking sheet; season with salt and pepper.
- Bake 10 to 15 minutes or until broccoli is browned and tender.
- Heat potatoes according to package directions.
