Bacon-Brown Sugar Pork Tenderloin

Ingredients

  • ¼ cup packed brown sugar
  • 3 Tbsp Dijon mustard
  • 1 tsp garlic salt
  • 2 (1-lb) pork tenderloins, trimmed
  • 10 slices bacon

Instructions

  1. Preheat oven to 425°F. Stir together brown sugar, Dijon, and garlic salt; rub all over pork. Wrap bacon around pork.
  2. Cook wrapped pork in a large oven-safe skillet over medium-high heat 3 to 4 minutes per side or until bacon begins to brown.
  3. Transfer skillet to oven, and bake 10 to 12 minutes or until a thermometer registers 145°F. Let stand 5 minutes before slicing.

  • 2 (12-oz) pkg broccoli florets
  • 2 Tbsp olive oil
  • 1 (32-oz) carton refrigerated mashed potatoes

Side Dish Instructions

  1. Preheat oven to 425°F. Toss broccoli with oil on a rimmed baking sheet; season with salt and pepper.
  2. Bake 10 to 15 minutes or until broccoli is browned and tender.
  3. Heat potatoes according to package directions.
