Balsamic-Glazed Blue Cheese Steaks

Ingredients
- 1 (8-oz) New York strip steak, trimmed
- ¼ tsp salt
- ¼ tsp pepper
- 1 Tbsp olive oil
- ¼ cup sliced onion
- 1 Tbsp minced garlic
- ¼ tsp dried crushed rosemary
- 1½ Tbsp balsamic glaze
- 3 Tbsp crumbled blue cheese
Instructions
- Sprinkle steak with salt and pepper. Cook in hot oil in a cast-iron skillet over medium-high heat 4 to 5 minutes per side or until browned and done; remove from skillet, and keep warm.
- Add onion, garlic, and rosemary to skillet; sauté 6 to 8 minutes or until onion is tender.
- Serve onion mixture over steak; drizzle with balsamic glaze, and sprinkle with cheese. Cut into two portions.

Side Dish Instructions
- Preheat oven to 475°F. Cut potatoes lengthwise into ½-inch-thick wedges. Toss with oil, garlic, rosemary, salt, and pepper on a rimmed baking sheet; spread in a single layer.
- Bake 20 to 25 minutes or until browned and tender, turning once.
