Ingredients

  • 1 (8-oz) New York strip steak, trimmed 
  • ¼ tsp salt
  • ¼ tsp pepper
  • 1 Tbsp olive oil
  • ¼ cup sliced onion
  • 1 Tbsp minced garlic
  • ¼ tsp dried crushed rosemary
  • 1½ Tbsp balsamic glaze
  • 3 Tbsp crumbled blue cheese

Instructions

  1. Sprinkle steak with salt and pepper. Cook in hot oil in a cast-iron skillet over medium-high heat 4 to 5 minutes per side or until browned and done; remove from skillet, and keep warm.
  2. Add onion, garlic, and rosemary to skillet; sauté 6 to 8 minutes or until onion is tender.
  3. Serve onion mixture over steak; drizzle with balsamic glaze, and sprinkle with cheese. Cut into two portions.

  • ½ lb sweet potatoes
  • 2 tsp olive oil
  • 2 tsp minced garlic
  • ½ tsp dried crushed rosemary
  • ⅛ tsp salt
  • ⅛ tsp pepper

Side Dish Instructions

  1. Preheat oven to 475°F. Cut potatoes lengthwise into ½-inch-thick wedges. Toss with oil, garlic, rosemary, salt, and pepper on a rimmed baking sheet; spread in a single layer.
  2. Bake 20 to 25 minutes or until browned and tender, turning once.
