Greek Turkey Patties
Balsamic Cucumbers and Tomatoes
Ingredients
- ¼ cup mayonnaise
- 1½ Tbsp chopped roasted red peppers
- 1½ lb ground turkey
- ¼ cup pitted chopped kalamata olives
- ¼ cup panko breadcrumbs
- 3 Tbsp capers
- 1 large egg
- 1 tsp dried oregano
- 1 Tbsp olive oil
Instructions
- Combine mayonnaise and roasted pepper; set aside.
- Combine turkey, olives, breadcrumbs, capers, egg, and oregano; shape into 4 patties.
- Cook patties in hot oil in a large skillet over medium-high heat 4 to 5 minutes per side or until done. Serve patties with mayonnaise mixture.
Side Dish Ingredients
- 2 Tbsp olive oil
- 1 Tbsp balsamic vinegar
- 1 tsp honey
- 1 tsp Dijon mustard
- ¼ tsp pepper
- 2 tomatoes, coarsely chopped
- 1 English cucumber, cut into ½-inch cubes
Side Dish Instructions
- Whisk together oil, vinegar, honey, mustard, and pepper in a bowl. Add tomatoes and cucumber; toss.
