Greek Turkey Patties

Balsamic Cucumbers and Tomatoes

Ingredients

  • ¼ cup mayonnaise
  • 1½ Tbsp chopped roasted red peppers
  • 1½ lb ground turkey
  • ¼ cup pitted chopped kalamata olives
  • ¼ cup panko breadcrumbs
  • 3 Tbsp capers
  • 1 large egg
  • 1 tsp dried oregano
  • 1 Tbsp olive oil

Instructions

  1. Combine mayonnaise and roasted pepper; set aside.
  2. Combine turkey, olives, breadcrumbs, capers, egg, and oregano; shape into 4 patties.
  3. Cook patties in hot oil in a large skillet over medium-high heat 4 to 5 minutes per side or until done. Serve patties with mayonnaise mixture.

Side Dish Ingredients

  • 2 Tbsp olive oil
  • 1 Tbsp balsamic vinegar
  • 1 tsp honey
  • 1 tsp Dijon mustard
  • ¼ tsp pepper
  • 2 tomatoes, coarsely chopped
  • 1 English cucumber, cut into ½-inch cubes

Side Dish Instructions

  1. Whisk together oil, vinegar, honey, mustard, and pepper in a bowl. Add tomatoes and cucumber; toss.
