Sun-Dried Tomato Chicken Pasta

Ingredients

  • 4 oz penne pasta (or use rotini pasta)
  • ¼ cup heavy cream
  • ¼ cup low-sodium chicken broth
  • 3 Tbsp sun-dried tomato pesto
  • 1 cup shredded rotisserie chicken
  • 2 cups spinach

Instructions

  1. Cook pasta according to package directions.
  2. Meanwhile, combine cream, broth, and pesto in a saucepan over medium heat; cook 6 to 8 minutes or until thickened. Stir in chicken. Add spinach; cook just until wilted. Serve over pasta.
