Savory Herb Chicken Casserole
Lemon-Parmesan Salad
Ingredients
- ¾ lb boneless, skinless chicken breasts, cut into bite-size pieces
- ½ (15-oz) pkg frozen mixed vegetables
- ¼ tsp pepper
- 1 (10.5-oz) can cream of chicken soup
- 2 Tbsp milk
- ½ (6-oz) pkg savory-herb stuffing mix
- ½ cup low-sodium chicken broth
Instructions
- Preheat oven to 350°F. Combine chicken and vegetables in a lightly greased 8-inch baking dish. Sprinkle with pepper.
- Stir together soup and milk; pour over chicken mixture. Sprinkle with stuffing mix. Drizzle broth over stuffing mix.
- Cover and bake 30 minutes. Uncover and bake 15 to 25 minutes longer or until stuffing is browned and chicken is done.
Side Dish Ingredients
- ½ head green leaf lettuce, chopped
- 1 cup halved grape tomatoes
- 2 Tbsp grated Parmesan cheese
- 2 Tbsp lemon vinaigrette
Side Dish Instructions
- Toss together all ingredients in a medium-size bowl just before serving.
