Ingredients

  • 1 (16-oz) pkg whole-grain penne pasta
  • 1 (19.5-oz) pkg Italian turkey sausage, casings removed
  • 1 (28-oz) can BPA-free organic no-salt-added diced tomatoes
  • 2 (6-oz) cans BPA-free tomato paste
  • 1 (15-oz) carton ricotta cheese
  • 3 Tbsp pesto
  • 1 cup shredded mozzarella cheese
  • ¼ cup freshly grated Parmesan cheese

Instructions

  1. Preheat oven to 375°F. Cook pasta according to package directions.
  2. Meanwhile, cook turkey sausage in a large skillet over medium-high heat until browned and crumbly; drain.
  3. Combine tomatoes, tomato paste, ricotta cheese, pesto, pasta, and sausage; spoon mixture into a greased 13- x 9-inch baking dish. Sprinkle with mozzarella and Parmesan cheeses.
  4. Bake 30 to 35 minutes or until cheese is melted and edges are bubbly.

Side Dish Ingredients

  • 1 (14.1-oz) can BPA-free hearts of palm, drained and rinsed
  • 4 cups baby arugula (or use baby spinach)
  • 3 Tbsp olive oil
  • 2 Tbsp red wine vinegar
  • ¼ tsp salt
  • ½ tsp pepper

Side Dish Instructions

  1. Slice hearts of palm. Toss together all ingredients in a bowl.
