Garlicky Brussels Sprouts

Ingredients

  • ¾ cup fresh orange juice
  • 2 Tbsp fresh lemon juice
  • 2 Tbsp fresh lime juice
  • 2 Tbsp honey
  • 1 Tbsp Dijon mustard
  • 1 tsp chopped fresh thyme (or use ¼ tsp dried)
  • 6 (6-oz) salmon fillets
  • ½ tsp salt
  • ¼ tsp pepper

Instructions

  1. Preheat oven to 450°F. Bring orange juice, lemon juice, lime juice, and honey to a boil in a small saucepan; reduce heat, and simmer 10 minutes or until reduced by half.
  2. Stir in mustard and thyme. Divide sauce into 2 portions.
  3. Place fish on a foil-lined rimmed baking sheet; sprinkle with salt and pepper. Brush with half of orange mixture.
  4. Bake 10 to 12 minutes or until fish flakes with a fork. Drizzle fish with remaining orange sauce.

  • 1½ lb Brussels sprouts, trimmed
  • 1 Tbsp olive oil
  • ½ tsp salt
  • ½ tsp pepper
  • ¼ tsp sugar
  • 2 cloves garlic, minced 
  • ½ cup low-sodium chicken broth
  • 1 Tbsp lemon juice

Side Dish Instructions

  1. Toss together Brussels sprouts, oil, salt, pepper, sugar, and garlic in a large bowl.
  2. Cook Brussels sprouts in a large skillet over high heat 2 minutes. Stir in broth; reduce heat to medium, and simmer 8 minutes or until sprouts are crisp-tender.
  3. Toss with lemon juice.
