Citrus Salmon
Garlicky Brussels Sprouts
Ingredients
- ¾ cup fresh orange juice
- 2 Tbsp fresh lemon juice
- 2 Tbsp fresh lime juice
- 2 Tbsp honey
- 1 Tbsp Dijon mustard
- 1 tsp chopped fresh thyme (or use ¼ tsp dried)
- 6 (6-oz) salmon fillets
- ½ tsp salt
- ¼ tsp pepper
Instructions
- Preheat oven to 450°F. Bring orange juice, lemon juice, lime juice, and honey to a boil in a small saucepan; reduce heat, and simmer 10 minutes or until reduced by half.
- Stir in mustard and thyme. Divide sauce into 2 portions.
- Place fish on a foil-lined rimmed baking sheet; sprinkle with salt and pepper. Brush with half of orange mixture.
- Bake 10 to 12 minutes or until fish flakes with a fork. Drizzle fish with remaining orange sauce.

- 1½ lb Brussels sprouts, trimmed
- 1 Tbsp olive oil
- ½ tsp salt
- ½ tsp pepper
- ¼ tsp sugar
- 2 cloves garlic, minced
- ½ cup low-sodium chicken broth
- 1 Tbsp lemon juice
Side Dish Instructions
- Toss together Brussels sprouts, oil, salt, pepper, sugar, and garlic in a large bowl.
- Cook Brussels sprouts in a large skillet over high heat 2 minutes. Stir in broth; reduce heat to medium, and simmer 8 minutes or until sprouts are crisp-tender.
- Toss with lemon juice.
