Spicy Maple Salmon

Sautéed Lemon Asparagus and Mushrooms

Ingredients

  • ⅓ cup spicy brown mustard
  • 3 Tbsp pure maple syrup
  • ½ tsp kosher salt
  • ¼ tsp cayenne pepper
  • 6 (6-oz) salmon fillets

Instructions

  1. Preheat broiler. Combine mustard, syrup, salt, and cayenne pepper in a small bowl. Brush mixture over fish on a foil-lined baking sheet.
  2. Broil 8 minutes or until fish flakes with a fork.

Side Dish Ingredients

  • 2 lb asparagus, trimmed
  • ¼ cup olive oil, divided
  • 2 tsp lemon zest
  • 1 Tbsp lemon juice
  • 1 (16-oz) pkg sliced mushrooms
  • ½ tsp salt 
  • ½ tsp pepper

Side Dish Instructions

  1. Cook asparagus in 2 Tbsp hot oil in large skillet over medium-high heat 5 minutes or until crisp-tender. Stir in lemon zest and lemon juice; cook 1 minute. Remove from skillet; cover to keep warm.
  2. Sauté mushrooms in 2 Tbsp hot oil in skillet over medium-high heat 10 to 15 minutes or until well browned, stirring occasionally. Sprinkle with salt and pepper.
