Sweet and Smoky Bacon-Wrapped Chicken

Ingredients

  • 1½ lb boneless, skinless chicken breasts, halved lengthwise
  • 1 Tbsp smoked paprika
  • 1 Tbsp chili powder
  • ½ tsp salt
  • ½ tsp pepper
  • 6 slices bacon
  • 2 Tbsp olive oil
  • 3 Tbsp honey

Instructions

  1. Preheat oven to 375°F. Sprinkle chicken with paprika, chili powder, salt, and pepper.
  2. Wrap 1 slice bacon around each piece of chicken; secure with wooden picks.
  3. Cook chicken, in batches, in hot oil in a large ovenproof skillet over medium-high heat 2 to 3 minutes per side. Arrange all chicken pieces in the skillet.
  4. Transfer skillet to oven. Bake 15 minutes or until chicken is done and bacon is crisp, drizzling with honey during last 5 minutes of baking.

Side Dish Ingredients

  • 2 cloves garlic, minced
  • 1 onion, chopped
  • 2 Tbsp olive oil
  • 2 cups frozen baby lima beans
  • 2 cups frozen whole kernel corn
  • ½ cup low-sodium chicken broth
  • ½ tsp salt
  • ½ tsp pepper
  • 1 pint grape tomatoes, halved

Side Dish Instructions

  1. Sauté garlic and onion in hot oil in a large nonstick skillet over medium-high heat 5 minutes or until tender.
  2. Stir in lima beans, corn, broth, salt, and pepper; reduce heat to medium.
  3. Cook, covered, 15 minutes or until limas are tender. Stir in tomatoes.
