Sweet and Smoky Bacon-Wrapped Chicken
Skillet SuccotashIngredients
- 1½ lb boneless, skinless chicken breasts, halved lengthwise
- 1 Tbsp smoked paprika
- 1 Tbsp chili powder
- ½ tsp salt
- ½ tsp pepper
- 6 slices bacon
- 2 Tbsp olive oil
- 3 Tbsp honey
Instructions
- Preheat oven to 375°F. Sprinkle chicken with paprika, chili powder, salt, and pepper.
- Wrap 1 slice bacon around each piece of chicken; secure with wooden picks.
- Cook chicken, in batches, in hot oil in a large ovenproof skillet over medium-high heat 2 to 3 minutes per side. Arrange all chicken pieces in the skillet.
- Transfer skillet to oven. Bake 15 minutes or until chicken is done and bacon is crisp, drizzling with honey during last 5 minutes of baking.

- 2 cloves garlic, minced
- 1 onion, chopped
- 2 Tbsp olive oil
- 2 cups frozen baby lima beans
- 2 cups frozen whole kernel corn
- ½ cup low-sodium chicken broth
- ½ tsp salt
- ½ tsp pepper
- 1 pint grape tomatoes, halved
Side Dish Instructions
- Sauté garlic and onion in hot oil in a large nonstick skillet over medium-high heat 5 minutes or until tender.
- Stir in lima beans, corn, broth, salt, and pepper; reduce heat to medium.
- Cook, covered, 15 minutes or until limas are tender. Stir in tomatoes.
