Caramelized Onion and Goat Cheese Pizzas

Ingredients
- 3 large sweet onions, thinly sliced
- 3 Tbsp olive oil, divided
- 2 Tbsp balsamic vinegar
- 6 burrito-size whole wheat flour tortillas
- 1 (6-oz) log goat cheese
- ¼ cup milk
- 1 (5-oz) pkg baby arugula
Instructions
- Preheat oven to 475°F. Cook onions, covered, in 2 Tbsp hot oil in a large nonstick skillet over medium heat 5 minutes or until onions are almost tender.
- Uncover and stir in vinegar. Cook 5 minutes, stirring often, until onions are browned and tender.
- Arrange tortillas on greased baking sheets.
- Process goat cheese and milk in a food processor or blender until combined, or mash in a bowl using a wooden spoon; spread on tortillas. Top with onions.
- Bake pizzas 6 minutes or until crisp; drizzle pizzas with 1 Tbsp oil, and top with arugula.
