Rosemary Sausage and Bean Skillet

Ingredients
- ½ (14-oz) pkg smoked sausage, sliced
- ½ onion, diced
- 1 Tbsp olive oil
- 1½ tsp minced garlic
- 1 (15.5-oz) can Great Northern beans, drained and rinsed
- ¾ cup low-sodium chicken broth, divided
- ½ tsp dried crushed rosemary (or use thyme or basil)
- 2 cups chopped kale
- ½ cup grated Parmesan cheese
Instructions
- Cook sausage and onion in hot oil in a large skillet over medium-high heat 6 to 8 minutes or until lightly browned. Add garlic; cook 1 minute or until fragrant.
- Reduce heat to medium; add two-thirds of beans, ½ cup broth, and rosemary to skillet, stirring to combine. Mash remaining beans; add to skillet. Cook 2 to 3 minutes or until thoroughly heated.
- Stir in kale, cheese, and ¼ cup broth; cook 2 minutes or until kale wilts and mixture is creamy.
