Bacon-Ranch Potato Wedges

Ingredients

  • 1 (2-lb) pkg frozen deli-style potato wedges
  • 2 Tbsp olive oil
  • 1 (1-oz) envelope Ranch dressing mix
  • 1 (12-oz) pkg bacon, chopped
  • 1 (8-oz) block colby-Jack cheese, shredded
  • 1 (16-oz) container refrigerated salsa, drained
  • 1 (8-oz) carton sour cream
  • 3 green onions, thinly sliced

Instructions

  1. Preheat oven to 425°F. Spread frozen potatoes in a single layer on a large rimmed baking sheet. Bake 15 to 20 minutes. Toss with oil and Ranch dressing mix while still hot.
  2. Meanwhile, cook bacon in a large skillet over medium heat 6 to 8 minutes or until crisp. Sprinkle bacon over fries; sprinkle with cheese.
  3. Bake 3 minutes or until cheese melts. Top with salsa, sour cream, and onions.
