Lemon Oil-Baked Tilapia

Prosciutto-Wrapped Green Beans and Parmesan Orzo

Ingredients

  • 2 lemons, divided
  • 3 Tbsp olive oil
  • 6 (4-oz) tilapia fillets
  • 2 Tbsp finely chopped fresh parsley
  • ½ tsp kosher salt
  • ½ tsp freshly ground pepper

Instructions

  1. Preheat oven to 425°F. Grate zest and squeeze juice from one lemon. Thinly slice remaining lemon.
  2. Whisk together oil, lemon juice, and lemon zest in a small bowl.
  3. Arrange fish in a lightly greased 13- x 9-inch baking dish. Sprinkle with parsley, salt, and pepper. Drizzle lemon oil over fish. Top with lemon slices.
  4. Bake 10 to 12 minutes or until fish flakes with a fork. Sprinkle with additional parsley, if desired.

  • 12 slices prosciutto (6 oz)
  • 2 (12-oz) pkg green beans
  • 3 Tbsp olive oil, divided
  • ½ tsp freshly ground pepper
  • 1½ cups whole wheat orzo
  • ½ cup freshly grated Parmesan cheese

Side Dish Instructions

  1. Preheat oven to 425°F. Arrange prosciutto in stacks of 2 slices each. Divide green beans among prosciutto stacks; wrap into bundles, securing with wooden picks, if necessary.
  2. Arrange green bean bundles on a parchment paper-lined large rimmed baking sheet; drizzle with 2 Tbsp oil, and sprinkle with pepper. Bake 12 to 15 minutes or until crisp and lightly browned.
  3. Meanwhile, cook orzo according to package directions; toss with 1 Tbsp oil, cheese, and pepper to taste.
