Lamb Kofta Bowls with Tzatziki Dip

Ingredients

  • 1½ lb ground lamb (or use ground beef)
  • 2 tsp garam masala
  • 2 cloves garlic, minced
  • ½ tsp kosher salt
  • ½ tsp pepper
  • 1½ cups whole wheat couscous
  • 2 pints grape tomatoes, halved
  • 1 cup tzatziki dip
  • 2 Tbsp chopped fresh mint (or use basil)

Instructions

  1. Preheat broiler. Combine lamb, garam masala, garlic,  salt, and pepper in a bowl; shape into 12 oblong meatballs.
  2. Place meatballs on a lightly greased foil-lined rimmed baking sheet. Broil 8 to 10 minutes or until meatballs are no longer pink in center.
  3. Meanwhile, cook couscous according to package directions.
  4. Divide couscous among 6 shallow bowls; top with meatballs, tomatoes, and tzatziki dip. Sprinkle with mint.
