Pork Tenderloin Fried Rice

Ingredients

  • 3 (8.8-oz) pouches microwavable jasmine rice
  • 3 large eggs, lightly beaten
  • 4 Tbsp toasted sesame oil, divided
  • 2 (1-lb) pork tenderloins
  • 4 green onions, chopped and divided
  • ¼ tsp crushed red pepper
  • 2 (12-oz) pkg stir-fry vegetables
  • ⅓ cup soy sauce

Instructions

  1. Microwave rice according to package directions.
  2. Cook eggs in 1 Tbsp hot oil in a large wok or skillet over medium-high heat, stirring occasionally, until set. Remove from skillet. Slice egg.
  3. Cut pork into bite-size pieces. Season with salt and pepper. Cook pork, 2 onions, and crushed red pepper in 1 Tbsp hot oil in same skillet over medium-high heat 8 minutes until done. Remove from skillet.
  4. Cook rice in 2 Tbsp hot oil in same skillet over medium-high heat until lightly browned.
  5. Meanwhile, steam vegetables according to package directions. Add vegetables, pork, egg, and soy sauce to rice. Cook, stirring, until thoroughly heated. Sprinkle with 2 onions.

  • 1 (1.25-lb) container peeled and cored pineapple

Side Dish Instructions

  1. Cut up pineapple, and serve alongside fried rice.
