Pork Tenderloin Fried Rice
Fresh Pineapple
Ingredients
- 3 (8.8-oz) pouches microwavable jasmine rice
- 3 large eggs, lightly beaten
- 4 Tbsp toasted sesame oil, divided
- 2 (1-lb) pork tenderloins
- 4 green onions, chopped and divided
- ¼ tsp crushed red pepper
- 2 (12-oz) pkg stir-fry vegetables
- ⅓ cup soy sauce
Instructions
- Microwave rice according to package directions.
- Cook eggs in 1 Tbsp hot oil in a large wok or skillet over medium-high heat, stirring occasionally, until set. Remove from skillet. Slice egg.
- Cut pork into bite-size pieces. Season with salt and pepper. Cook pork, 2 onions, and crushed red pepper in 1 Tbsp hot oil in same skillet over medium-high heat 8 minutes until done. Remove from skillet.
- Cook rice in 2 Tbsp hot oil in same skillet over medium-high heat until lightly browned.
- Meanwhile, steam vegetables according to package directions. Add vegetables, pork, egg, and soy sauce to rice. Cook, stirring, until thoroughly heated. Sprinkle with 2 onions.

- 1 (1.25-lb) container peeled and cored pineapple

- Cut up pineapple, and serve alongside fried rice.
