Beef and Vegetable Lo Mein
Ingredients
- 2 (8-oz) pkg lo mein noodles (or use spaghetti)
- 1½ lb flank steak, thinly sliced
- 2 (12-oz) pkg stir-fry medley
- 2 Tbsp olive oil
- ½ cup low-sodium chicken broth
- ¼ cup low-sodium soy sauce
- 2 Tbsp garlic paste
- ¼ tsp ground ginger
- ¼ tsp crushed red pepper (optional)
Instructions
- Cook noodles according to package directions.
- Meanwhile, cook steak and vegetables in hot oil in a large skillet over medium-high heat 6 minutes or until steak is cooked to desired doneness and vegetables are tender.
- Stir in broth, soy sauce, garlic paste, ginger, and, if desired, red pepper. Cook until sauce is thickened. Add noodles; toss.
