Beef and Vegetable Lo Mein

Ingredients

  • 2 (8-oz) pkg lo mein noodles (or use spaghetti)
  • 1½ lb flank steak, thinly sliced
  • 2 (12-oz) pkg stir-fry medley
  • 2 Tbsp olive oil
  • ½ cup low-sodium chicken broth
  • ¼ cup low-sodium soy sauce
  • 2 Tbsp garlic paste
  • ¼ tsp ground ginger
  • ¼ tsp crushed red pepper (optional)

Instructions

  1. Cook noodles according to package directions.
  2. Meanwhile, cook steak and vegetables in hot oil in a large skillet over medium-high heat 6 minutes or until steak is cooked to desired doneness and vegetables are tender.
  3. Stir in broth, soy sauce, garlic paste, ginger, and, if desired, red pepper. Cook until sauce is thickened. Add noodles; toss.
