Parmesan Chicken Piccata
Garlicky Green BeansIngredients
- 3 (8-oz) boneless, skinless chicken breasts, halved lengthwise
- ½ tsp salt
- ½ tsp pepper
- 2 Tbsp almond flour
- ¼ cup olive oil
- ¼ cup lemon juice
- ¼ cup low-sodium chicken broth
- 3 Tbsp drained capers
- ¼ cup butter
- ¼ cup freshly grated Parmesan cheese
Instructions
- Sprinkle chicken with salt, pepper, and flour. Cook chicken, in batches, in 1 Tbsp hot oil per batch in a large nonstick skillet over medium heat 3 to 4 minutes per side or until done. Remove chicken from skillet.
- Add lemon juice and broth to skillet, scraping pan to loosen browned bits. Cook 2 minutes or until liquid is reduced by half.
- Add capers and butter; cook, stirring constantly, 2 minutes or until slightly thickened. Spoon sauce over chicken; sprinkle with cheese.
