Parmesan Chicken Piccata

Ingredients

  • 3 (8-oz) boneless, skinless chicken breasts, halved lengthwise
  • ½ tsp salt
  • ½ tsp pepper
  • 2 Tbsp almond flour
  • ¼ cup olive oil
  • ¼ cup lemon juice
  • ¼ cup low-sodium chicken broth
  • 3 Tbsp drained capers
  • ¼ cup butter
  • ¼ cup freshly grated Parmesan cheese

Instructions

  1. Sprinkle chicken with salt, pepper, and flour. Cook chicken, in batches, in 1 Tbsp hot oil per batch in a large nonstick skillet over medium heat 3 to 4 minutes per side or until done. Remove chicken from skillet.
  2. Add lemon juice and broth to skillet, scraping pan to loosen browned bits. Cook 2 minutes or until liquid is reduced by half.
  3. Add capers and butter; cook, stirring constantly, 2 minutes or until slightly thickened. Spoon sauce over chicken; sprinkle with cheese.
