Kung Pao Chicken Sloppy Joes

Ingredients

  • 1½ lb ground chicken
  • 1 onion, diced
  • 2 Tbsp vegetable oil
  • 2 Tbsp minced garlic
  • ¾ cup kung pao sauce
  • 6 hamburger buns
  • ¼ cup chopped fresh cilantro

Instructions

  1. Cook chicken and onion in hot oil in a large skillet over medium-high heat 6 to 8 minutes or until browned and crumbly. Stir in garlic; cook 1 minute or until fragrant.
  2. Reduce heat to medium; add sauce, and cook 2 to 3 minutes or until thoroughly heated.
  3. Divide chicken mixture among buns. Top with Asian Slaw recipe and cilantro.

  • 3 Tbsp rice vinegar
  • 3 Tbsp vegetable oil
  • 2 Tbsp low-sodium soy sauce
  • 1 (16-oz) pkg tricolor coleslaw
  • ½ cup chopped fresh cilantro
  • ½ cup chopped roasted, salted peanuts

Side Dish Instructions

  1. Whisk together vinegar, oil, and soy sauce in a large bowl. Add coleslaw, cilantro, and nuts; toss.
