Sweet Potato-Kale Frittata

Ingredients

  • 1 (10-oz) pkg frozen diced sweet potatoes
  • 2 Tbsp olive oil
  • 2 Tbsp minced garlic
  • 3 cups chopped kale
  • 12 large eggs
  • 1 (8-oz) block mozzarella cheese, shredded
  • ¾ tsp dried basil
  • ½ tsp pepper

Instructions

  1. Preheat oven to 350°F. Cook potatoes in hot oil in a large ovenproof skillet over medium-high heat 6 to 8 minutes or until browned and tender. Add garlic and kale; cook 1 to 2 minutes or until garlic is fragrant and kale is wilted.
  2. Whisk together eggs, 1 cup cheese, basil, and pepper. Add to skillet; cook 2 minutes. Sprinkle with 1 cup cheese.
  3. Transfer skillet to oven. Bake 12 to 15 minutes or until center is set. Let stand 5 minutes before serving.
