Sweet Potato-Kale Frittata
English Muffins
Ingredients
- 1 (10-oz) pkg frozen diced sweet potatoes
- 2 Tbsp olive oil
- 2 Tbsp minced garlic
- 3 cups chopped kale
- 12 large eggs
- 1 (8-oz) block mozzarella cheese, shredded
- ¾ tsp dried basil
- ½ tsp pepper
Instructions
- Preheat oven to 350°F. Cook potatoes in hot oil in a large ovenproof skillet over medium-high heat 6 to 8 minutes or until browned and tender. Add garlic and kale; cook 1 to 2 minutes or until garlic is fragrant and kale is wilted.
- Whisk together eggs, 1 cup cheese, basil, and pepper. Add to skillet; cook 2 minutes. Sprinkle with 1 cup cheese.
- Transfer skillet to oven. Bake 12 to 15 minutes or until center is set. Let stand 5 minutes before serving.
