Ingredients

  • 1 (8.8-oz) pouch microwavable long-grain rice
  • ¾ lb boneless, skinless chicken breasts, thinly sliced
  • ½ (1-oz) envelope taco seasoning mix
  • ½ onion, thinly sliced
  • 1 green bell pepper, thinly sliced
  • ⅔ cup frozen whole kernel corn
  • 1 Tbsp olive oil
  • ¾ cup drained and rinsed canned pinto beans
  • 1 cup shredded Cheddar cheese
  • ½ cup refrigerated salsa
  • ¼ cup sour cream

Instructions

  1. Heat rice according to package directions.
  2. Meanwhile, sprinkle chicken with taco seasoning. Cook chicken, onion, bell pepper, and corn in hot oil in a large skillet over medium-high heat until chicken is done and vegetables are tender. Add beans; cook 2 minutes.
  3. Layer rice, chicken mixture, and cheese in 2 bowls. Top with salsa and sour cream.

  • ½ (11-oz) pkg tortilla chips
