Ingredients

  • 1½ lb ground beef
  • 1 cup chopped onion
  • 2 Tbsp jarred minced garlic
  • 1 (14.5-oz) can diced tomatoes with basil, garlic, and oregano
  • 1 (32-oz) carton beef stock
  • ½ (16-oz) pkg crinkle cut carrots
  • 2 tsp Italian seasoning
  • 1 (15-oz) can cannellini beans, drained
  • 3 cups baby spinach
  • 1 cup freshly grated Parmesan cheese

Instructions

  1. Cook beef, onion, and garlic in a Dutch oven over medium heat until beef is browned and coarsely crumbled. Drain and return to pot. Add tomatoes, stock, carrots, and seasoning; bring to a simmer. Cook 10 minutes.
  2. Add beans and spinach; cook just until thoroughly heated. Sprinkle each serving with cheese.
