Chicken and Waffles Casserole

Honey-Drizzled Strawberries and Yogurt

Ingredients

  • 16 frozen waffles
  • 12 large eggs
  • 1½ cups milk
  • ½ cup maple syrup
  • 1 tsp ground cinnamon
  • 1 (24-oz) pkg frozen breaded popcorn chicken, thawed, and cut into bite-sized pieces

Instructions

  1. Preheat oven to 350°F.  Toast waffles according to package directions.
  2. Meanwhile, whisk together eggs, milk, syrup, and cinnamon in a large bowl. Tear waffles into bite-sized pieces and add to egg mixture along with chicken; stir.
  3. Cover, and refrigerate 8 hours, stir again. Let stand at room temperature 30 minutes.
  4. Spoon mixture into a lightly greased 13 -x 9-inch baking dish. Cover, and bake 30 minutes. Uncover, and bake 30 minutes longer or until center is set.

Side Dish Ingredients

  • 1 (16-oz) container strawberries, sliced
  • 1 (5.3-oz) carton vanilla yogurt
  • 2 Tbsp honey

Side Dish Instructions

  1. Spoon strawberries in to 6 serving dishes.
  2. Top with yogurt, and drizzle with honey.
