Sweet and Tangy Marinated Chicken

Sweet Potato Wedges and Roasted Broccoli

Ingredients

  • 2 lb boneless, skinless chicken breasts
  • 1 (12-oz) can cola
  • ¼ cup soy sauce
  • ¼ cup packed brown sugar
  • 1 Tbsp balsamic vinegar
  • 1 tsp garlic powder
  • 2 Tbsp olive oil

Instructions

  1. Cut chicken in half crosswise and pound to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet.
  2. Whisk together cola, soy sauce, brown sugar, vinegar, and garlic powder in a shallow dish. Add chicken; turning to coat. Cover, and refrigerate 2 hours.
  3. Preheat oven to 400°F. Remove chicken from marinade, discard marinade.
  4. Cook chicken in hot oil in a large oven-safe skillet over medium-high heat 3 minutes per side. Transfer skillet to oven, and bake 10 to 12 minutes or until chicken is done.

Side Dish Ingredients

  • 3 large sweet potatoes, peeled and cut into ½-inch-thick wedges
  • 4 Tbsp olive oil, divided
  • 1 tsp garlic salt
  • 1 head broccoli, cut into florets

Side Dish Instructions

  1. Preheat oven to 400°F. Toss together potatoes and 2 Tbsp oil on a large lightly greased rimmed baking sheet. Sprinkle with garlic salt and pepper to taste; toss.
  2. Bake 25 minutes or until tender and browned.
  3. Toss together broccoli and 2 Tbsp oil on a second large rimmed baking sheet; season lightly with salt and pepper, if desired. Bake 20 minutes or until browned and tender.
