Hoisin-Glazed Tofu and Green Beans

Ingredients

  • 1 (14-oz) pkg extra-firm tofu, drained
  • ½ (8-oz) pkg soba noodles
  • 3 Tbsp water
  • 3 Tbsp vegan hoisin sauce
  • 1 Tbsp low-sodium soy sauce
  • 1 Tbsp ginger paste
  • 1 clove garlic, minced
  • ⅛ tsp crushed red pepper
  • 1 Tbsp olive oil
  • 1 (8-oz) pkg thin green beans, halved
  • ½ cup cashew pieces

Instructions

  1. Press tofu with several layers of paper towels to remove excess liquid. Place a heavy skillet over paper towel-topped tofu, and let stand 10 minutes; cube tofu.
  2. Meanwhile, cook noodles according to package directions.
  3. Whisk together water, hoisin, soy sauce, ginger, garlic, and red pepper.
  4. Cook tofu, in 2 batches, in hot oil in a large nonstick skillet over medium-high heat 4 to 5 minutes or until browned; add green beans and hoisin mixture.
  5. Cover and cook 3 minutes or until green beans are tender; uncover and cook, stirring, 2 minutes longer or until sauce is thickened.
  6. Serve over soba noodles; sprinkle with nuts.
