Hoisin-Glazed Tofu and Green Beans

Ingredients
- 1 (14-oz) pkg extra-firm tofu, drained
- ½ (8-oz) pkg soba noodles
- 3 Tbsp water
- 3 Tbsp vegan hoisin sauce
- 1 Tbsp low-sodium soy sauce
- 1 Tbsp ginger paste
- 1 clove garlic, minced
- ⅛ tsp crushed red pepper
- 1 Tbsp olive oil
- 1 (8-oz) pkg thin green beans, halved
- ½ cup cashew pieces
Instructions
- Press tofu with several layers of paper towels to remove excess liquid. Place a heavy skillet over paper towel-topped tofu, and let stand 10 minutes; cube tofu.
- Meanwhile, cook noodles according to package directions.
- Whisk together water, hoisin, soy sauce, ginger, garlic, and red pepper.
- Cook tofu, in 2 batches, in hot oil in a large nonstick skillet over medium-high heat 4 to 5 minutes or until browned; add green beans and hoisin mixture.
- Cover and cook 3 minutes or until green beans are tender; uncover and cook, stirring, 2 minutes longer or until sauce is thickened.
- Serve over soba noodles; sprinkle with nuts.
