Caribbean Couscous with Black Beans

Ingredients

  • 2 cups whole wheat couscous
  • 2 Tbsp olive oil
  • 2 Tbsp lime juice
  • ¼ cup chopped fresh cilantro
  • ½ tsp salt
  • ½ tsp pepper
  • 2 (15-oz) cans black beans, drained and rinsed
  • 1 (10-oz) pkg mango slices, diced
  • 1 English cucumber, diced
  • ⅓ cup diced red onion

Instructions

  1. Cook couscous according to package directions; fluff with a fork.
  2. Whisk together oil, lime juice, cilantro, salt, and pepper in a large bowl. Stir in couscous, beans, mango, cucumber, and onion.

  • 1 (2-lb) pkg frozen ripe plantains

Side Dish Instructions

  1. Bake plantains according to package directions. If desired, season with salt to taste.
