Caribbean Couscous with Black Beans

Ingredients
- 2 cups whole wheat couscous
- 2 Tbsp olive oil
- 2 Tbsp lime juice
- ¼ cup chopped fresh cilantro
- ½ tsp salt
- ½ tsp pepper
- 2 (15-oz) cans black beans, drained and rinsed
- 1 (10-oz) pkg mango slices, diced
- 1 English cucumber, diced
- ⅓ cup diced red onion
Instructions
- Cook couscous according to package directions; fluff with a fork.
- Whisk together oil, lime juice, cilantro, salt, and pepper in a large bowl. Stir in couscous, beans, mango, cucumber, and onion.

- 1 (2-lb) pkg frozen ripe plantains

- Bake plantains according to package directions. If desired, season with salt to taste.
