15-Minute Everything Bagel Avocado Toast
Apple and Mixed Greens SaladIngredients
- 6 vegan everything bagels, split
- 3 avocados
- 2 Tbsp lemon juice
- 1 pint grape tomatoes, halved (or use cherry tomatoes)
- ½ tsp everything bagel seasoning
- 3 Tbsp vegan balsamic glaze
Instructions
- Preheat broiler. Broil bagels, cut sides up, 1 minute or until golden brown.
- Mash avocados with lemon juice in a bowl. Season with salt and pepper, if desired. Spread on toasted bagels.
- Arrange tomatoes on avocado; sprinkle with seasoning. Drizzle with glaze.

- 2 (5-oz) pkg spring mix
- 2 red apples, chopped
- 1 cup shredded carrots
- ½ cup vegan Ranch dressing
Side Dish Instructions
- Toss together all ingredients in a large bowl.
