15-Minute Everything Bagel Avocado Toast

Apple and Mixed Greens Salad

Ingredients

  • 6 vegan everything bagels, split
  • 3 avocados
  • 2 Tbsp lemon juice
  • 1 pint grape tomatoes, halved (or use cherry tomatoes)
  • ½ tsp everything bagel seasoning
  • 3 Tbsp vegan balsamic glaze

Instructions

  1. Preheat broiler. Broil bagels, cut sides up, 1 minute or until golden brown.
  2. Mash avocados with lemon juice in a bowl. Season with salt and pepper, if desired. Spread on toasted bagels.
  3. Arrange tomatoes on avocado; sprinkle with seasoning. Drizzle with glaze.

Side Dish Ingredients

  • 2 (5-oz) pkg spring mix
  • 2 red apples, chopped
  • 1 cup shredded carrots
  • ½ cup vegan Ranch dressing

Side Dish Instructions

  1.  Toss together all ingredients in a large bowl.
