Chicken Alfredo with Crispy Garlic Crumbs

Ingredients
- ½ lb boneless, skinless chicken breasts
- ⅛ tsp salt
- ⅛ tsp pepper
- 2 tsp olive oil
- ⅓ cup Alfredo sauce
- 1 Tbsp butter
- 1 clove garlic, minced
- 3 Tbsp panko breadcrumbs
- ¼ tsp Italian seasoning
- 2 Tbsp grated Parmesan cheese
Instructions
- Sprinkle chicken with salt and pepper. Cook chicken in hot oil in a skillet over medium-high heat 4 to 5 minutes per side or until browned.
- Reduce heat to medium, add Alfredo sauce, and cook 3 to 4 minutes or until thoroughly heated and chicken is done.
- Meanwhile, melt butter in a small skillet over medium heat. Add garlic; cook 1 minute or until fragrant. Add breadcrumbs and seasoning; cook 2 minutes, stirring constantly, until breadcrumbs are toasted. Remove from heat; stir in cheese. Sprinkle over chicken.

- ⅓ cup low-sodium chicken broth
- 2 Tbsp heavy cream (or use chicken broth)
- ¼ tsp Italian seasoning
- ⅛ tsp salt
- ⅛ tsp pepper
- 2 cups spinach
Side Dish Instructions
- Cook spaghetti according to package directions.
- Combine broth, cream, Italian seasoning, salt, and pepper in a saucepan over medium heat 8 minutes or until thickened. Stir in spinach until wilted.
- Toss together pasta and spinach mixture.
