Ingredients

  • 1½ lb lean ground beef
  • 1 onion, diced
  • 3 Tbsp olive oil, divided
  • 1 cup pimiento cheese
  • 12 slices whole wheat bread

Instructions

  1. Cook beef and onion in 1 Tbsp hot oil in a large skillet over medium-high heat 6 to 8 minutes or until browned and crumbly.
  2. Divide beef mixture among 6 bread slices; top with pimiento cheese and remaining bread slices. Wipe skillet clean.
  3. Cook sandwiches, in 2 batches, in 1 Tbsp hot oil per batch in same skillet 3 to 4 minutes per side or until bread is toasted and cheese melts.

  • 1 (10-oz) pkg arugula
  • 3 Roma tomatoes, chopped
  • 1 cup shredded carrots
  • ⅓ cup olive oil vinaigrette

Side Dish Instructions

  1. Toss together all ingredients in a large bowl.
