Pimiento Cheese and Beef Melts

Ingredients
- 1½ lb lean ground beef
- 1 onion, diced
- 3 Tbsp olive oil, divided
- 1 cup pimiento cheese
- 12 slices whole wheat bread
Instructions
- Cook beef and onion in 1 Tbsp hot oil in a large skillet over medium-high heat 6 to 8 minutes or until browned and crumbly.
- Divide beef mixture among 6 bread slices; top with pimiento cheese and remaining bread slices. Wipe skillet clean.
- Cook sandwiches, in 2 batches, in 1 Tbsp hot oil per batch in same skillet 3 to 4 minutes per side or until bread is toasted and cheese melts.
Side Dish Ingredients
- 1 (10-oz) pkg arugula
- 3 Roma tomatoes, chopped
- 1 cup shredded carrots
- ⅓ cup olive oil vinaigrette
Side Dish Instructions
- Toss together all ingredients in a large bowl.
