Stovetop Shakshuka
Garlicky Toasted Baguette
Ingredients
- 2 red bell peppers, chopped
- 2 Tbsp olive oil
- 1 (10-oz) pkg baby spinach
- 1 (29-oz) can tomato sauce
- 1 tsp garlic powder
- 1 tsp Italian seasoning
- ½ tsp salt
- 6 large eggs
- 1 cup crumbled goat cheese
- ¼ cup chopped fresh basil (optional)
Instructions
- Cook bell peppers in hot oil in a large skillet over medium-high heat 5 minutes or until tender. Add spinach; cook 1 to 2 minutes or until wilted.
- Stir in tomato sauce, garlic powder, Italian seasoning, and salt; cook 3 minutes or until thoroughly heated.
- Using the back of a spoon or spatula, make 6 indentations in sauce mixture; crack one egg into each indentation. Sprinkle with cheese. Cover and cook 5 to 8 minutes or until egg whites are set and yolks are cooked to desired doneness. Sprinkle with basil, if desired.

- 2 Tbsp butter, melted
- 2 Tbsp olive oil
- 2 Tbsp minced garlic
- 1 (14-oz) French baguette, halved lengthwise
Side Dish Instructions
- Preheat oven to 350°F. Combine butter, oil, and garlic; spread on cut sides of bread. Arrange on a baking sheet, buttered sides up.
- Bake 15 minutes or until crusty and browned.
