Garlicky Toasted Baguette

Ingredients

  • 2 red bell peppers, chopped
  • 2 Tbsp olive oil
  • 1 (10-oz) pkg baby spinach
  • 1 (29-oz) can tomato sauce
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • ½ tsp salt
  • 6 large eggs
  • 1 cup crumbled goat cheese
  • ¼ cup chopped fresh basil (optional)

Instructions

  1. Cook bell peppers in hot oil in a large skillet over medium-high heat 5 minutes or until tender. Add spinach; cook 1 to 2 minutes or until wilted.
  2. Stir in tomato sauce, garlic powder, Italian seasoning, and salt; cook 3 minutes or until thoroughly heated.
  3. Using the back of a spoon or spatula, make 6 indentations in sauce mixture; crack one egg into each indentation. Sprinkle with cheese. Cover and cook 5 to 8 minutes or until egg whites are set and yolks are cooked to desired doneness. Sprinkle with basil, if desired.

  • 2 Tbsp butter, melted
  • 2 Tbsp olive oil
  • 2 Tbsp minced garlic
  • 1 (14-oz) French baguette, halved lengthwise

Side Dish Instructions

  1. Preheat oven to 350°F. Combine butter, oil, and garlic; spread on cut sides of bread. Arrange on a baking sheet, buttered sides up.
  2. Bake 15 minutes or until crusty and browned.
