Maple-Rubbed Barbecue Pork

Rustic Mashed Potatoes and Sweet Peas

Ingredients

  • ¼ cup water
  • 2½ lb boneless pork shoulder (or use Boston butt pork roast)
  • 1 Tbsp smokehouse maple seasoning
  • 1 cup barbecue sauce

Instructions

  1. Pour water in a lightly greased 5- to 7-quart slow cooker.
  2. Rub pork with seasoning, and place in cooker, fat side up. Cover and cook on LOW 10 hours or until pork is very tender.
  3. Remove pork from cooker, and shred using 2 forks. Combine pork and barbecue sauce.

Side Dish Ingredients

  • 1½ lb russet potatoes, peeled and cut into chunks
  • ¼ cup heavy cream
  • ¼ cup butter
  • ½ tsp salt
  • ½ tsp pepper
  • 1 (12-oz) pkg frozen sweet peas

Side Dish Instructions

  1. Bring potatoes and water to cover to a boil in a large saucepan; boil 10 to 15 minutes or until tender.
  2. Drain well, and return potatoes to pan.
  3. Add cream, butter, salt, and pepper; mash to desired consistency.
  4. Meanwhile, cook peas according to package directions.
