Pulled Pork Sandwiches

Ingredients

  • ¾ lb pork loin roast, trimmed (or use boneless pork chops)
  • 1 tsp chili powder
  • ⅛ tsp salt
  • ⅛ tsp pepper
  • 1 sweet onion, sliced
  • ⅓ cup apple juice
  • 1 (8-oz) can tomato sauce
  • 2 tsp molasses
  • 2 hamburger buns

Instructions

  1. Place pork in a 3- to 4-quart slow cooker; sprinkle with chili powder, salt, and pepper. Top with onion, apple juice, tomato sauce, and molasses.
  2. Cover and cook on LOW 4 to 6 hours or until tender.
  3. Shred pork with 2 forks. Serve pork on buns with sauce from cooker, if desired.

Side Dish Ingredients

  • ¼ lb green beans, trimmed
  • ½ lb red potatoes, halved
  • 1½ Tbsp olive oil
  • 1 Tbsp lemon juice
  • 1 tsp dried dill
  • 1 tsp Dijon mustard
  • ¼ tsp salt
  • ¼ tsp pepper
  • 2 cups baby arugula

Side Dish Instructions

  1. Cut green beans in half. Place potatoes in a saucepan, and add water to cover; bring to a boil. Cook 12 minutes or until potatoes are almost tender.
  2. Add green beans, and cook 3 minutes or until potatoes and green beans are tender.
  3. Meanwhile, whisk together oil, lemon juice, dill, mustard, salt, and pepper in a medium bowl.
  4. Drain potatoes and green beans; add to bowl. Add arugula; toss.
