Pulled Pork Sandwiches
Green Bean and Potato SaladIngredients
- ¾ lb pork loin roast, trimmed (or use boneless pork chops)
- 1 tsp chili powder
- ⅛ tsp salt
- ⅛ tsp pepper
- 1 sweet onion, sliced
- ⅓ cup apple juice
- 1 (8-oz) can tomato sauce
- 2 tsp molasses
- 2 hamburger buns
Instructions
- Place pork in a 3- to 4-quart slow cooker; sprinkle with chili powder, salt, and pepper. Top with onion, apple juice, tomato sauce, and molasses.
- Cover and cook on LOW 4 to 6 hours or until tender.
- Shred pork with 2 forks. Serve pork on buns with sauce from cooker, if desired.
Side Dish Ingredients
- ¼ lb green beans, trimmed
- ½ lb red potatoes, halved
- 1½ Tbsp olive oil
- 1 Tbsp lemon juice
- 1 tsp dried dill
- 1 tsp Dijon mustard
- ¼ tsp salt
- ¼ tsp pepper
- 2 cups baby arugula
Side Dish Instructions
- Cut green beans in half. Place potatoes in a saucepan, and add water to cover; bring to a boil. Cook 12 minutes or until potatoes are almost tender.
- Add green beans, and cook 3 minutes or until potatoes and green beans are tender.
- Meanwhile, whisk together oil, lemon juice, dill, mustard, salt, and pepper in a medium bowl.
- Drain potatoes and green beans; add to bowl. Add arugula; toss.
