Spicy Barbecue Pork Nachos

Ingredients

  • ¼ cup water
  • 1 lb boneless pork shoulder (or use Boston butt pork roast)
  • 1½ tsp smokehouse maple seasoning
  • 6 Tbsp barbecue sauce
  • ½ (11-oz) bag tortilla chips
  • Spicy Cheese Sauce (recipe follows)
  • ½ (8-oz) pkg shredded iceberg lettuce
  • 1 Roma tomato, diced
  • ½ cup sour cream

Instructions

  1. Pour water in a lightly greased 3- to 4-quart slow cooker.
  2. Rub pork with seasoning, and place in cooker, fat side up. Cover and cook on LOW 10 hours or until pork is very tender.
  3. Remove pork from cooker, and shred using 2 forks. Combine pork and barbecue sauce.
  4. Place chips on 3 plates; top with pork, Spicy Cheese Sauce, lettuce, tomato, and sour cream.

Side Dish Ingredients

  • ½ (8-oz) pkg processed cheese, cut into cubes
  • ½ (10-oz) can diced tomatoes and green chiles, drained

Side Dish Instructions

  1. Combine cheese and tomatoes in a microwave-safe bowl. Microwave at HIGH 2 to 3 minutes or until melted, stirring as needed.
