Brown Sugar-Baked Chicken

Ingredients

  • 2 lb boneless, skinless chicken breasts
  • 2 Tbsp olive oil
  • ½ cup packed brown sugar
  • ¼ cup butter, melted
  • 3 Tbsp ketchup
  • 2 Tbsp Dijon mustard
  • 1 Tbsp Worcestershire sauce

Instructions

  1. Preheat oven to 400°F. Cut chicken in half crosswise, and pound to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet; season lightly with salt and pepper.
  2. Cook chicken in hot oil in a large ovenproof skillet over medium-high heat 3 minutes per side or until browned.
  3. Stir together brown sugar and remaining ingredients; pour over chicken. Transfer skillet to oven, and bake 15 minutes or until chicken is done.
