Tomato-Feta Shrimp
Easy Steamed Green Beans and Brown Rice
Ingredients
- ¼ cup sliced red onion
- 2 tsp olive oil
- ½ (14.5-oz) can diced tomatoes with basil, garlic, and oregano
- ¾ lb peeled and deveined, large raw shrimp
- ⅓ cup crumbled feta cheese
- 2 Tbsp sliced fresh basil (optional)
Instructions
- Preheat broiler. Cook onion in hot oil in a Dutch oven over medium-high heat 4 minutes or until tender. Reduce heat to medium, and add tomatoes. Cook 8 minutes or until reduced.
- Add shrimp to sauce in a single layer; cook 5 minutes, turning shrimp after 3 minutes.
- Sprinkle with cheese. Transfer to oven; broil 1 to 2 minutes or until cheese is lightly browned. Sprinkle with basil, if desired.

- 1 (3.5-oz) pouch boil-in-bag brown rice
- 1 (8-oz) pkg thin green beans
- ⅛ tsp pepper
- ⅛ tsp salt
Side Dish Instructions
- Cook rice according to package directions.
- Cook green beans according to package directions; toss with pepper and salt.
