Tomato-Feta Shrimp

Easy Steamed Green Beans and Brown Rice

Ingredients

  • ¼ cup sliced red onion
  • 2 tsp olive oil
  • ½ (14.5-oz) can diced tomatoes with basil, garlic, and oregano
  • ¾ lb peeled and deveined, large raw shrimp
  • ⅓ cup crumbled feta cheese
  • 2 Tbsp sliced fresh basil (optional)

Instructions

  1. Preheat broiler. Cook onion in hot oil in a Dutch oven over medium-high heat 4 minutes or until tender. Reduce heat to medium, and add tomatoes. Cook 8 minutes or until reduced.
  2. Add shrimp to sauce in a single layer; cook 5 minutes, turning shrimp after 3 minutes.
  3. Sprinkle with cheese. Transfer to oven; broil 1 to 2 minutes or until cheese is lightly browned. Sprinkle with basil, if desired.

  • 1 (3.5-oz) pouch boil-in-bag brown rice
  • 1 (8-oz) pkg thin green beans
  • ⅛ tsp pepper 
  • ⅛ tsp salt  

Side Dish Instructions

  1. Cook rice according to package directions.
  2. Cook green beans according to package directions; toss with pepper and salt.
