Prosciutto and Fig Pizza

Ingredients

  • ½ (16-oz) ball bakery pizza dough (see Note)
  • 1 Tbsp olive oil, divided
  • ½ onion, sliced
  • ⅓ cup fig preserves
  • 1½ cups arugula
  • ½ (4-oz) pkg thinly sliced prosciutto
  • ⅓ cup shredded Parmesan cheese
  • ⅓ cup crumbled goat cheese (or use gorgonzola cheese)

Instructions

  1. Preheat oven to 400°F. Roll out dough to an 8-inch round on a greased baking sheet. Prick dough several times with a fork. Brush with ½ Tbsp oil; bake 6 minutes.
  2. Meanwhile, cook onion in ½ Tbsp hot oil in a large skillet over medium-high heat 5 minutes. Remove from heat.
  3. Spread preserves over partially-baked crust. Top with onion, arugula, prosciutto, and cheeses. Bake 8 to 10 minutes or until crust is browned and cheese melts.
