Prosciutto and Fig Pizza

Ingredients
- ½ (16-oz) ball bakery pizza dough (see Note)
- 1 Tbsp olive oil, divided
- ½ onion, sliced
- ⅓ cup fig preserves
- 1½ cups arugula
- ½ (4-oz) pkg thinly sliced prosciutto
- ⅓ cup shredded Parmesan cheese
- ⅓ cup crumbled goat cheese (or use gorgonzola cheese)
Instructions
- Preheat oven to 400°F. Roll out dough to an 8-inch round on a greased baking sheet. Prick dough several times with a fork. Brush with ½ Tbsp oil; bake 6 minutes.
- Meanwhile, cook onion in ½ Tbsp hot oil in a large skillet over medium-high heat 5 minutes. Remove from heat.
- Spread preserves over partially-baked crust. Top with onion, arugula, prosciutto, and cheeses. Bake 8 to 10 minutes or until crust is browned and cheese melts.
