BLT Quesadillas
Cilantro-Chile Corn
Ingredients
- 12 slices center cut bacon
- 6 burrito-size flour tortillas
- 3 cups baby spinach
- 1 (8-oz) pkg shredded mozzarella cheese
- 1 cup refrigerated salsa, drained (or use pico de gallo)
Instructions
- Preheat oven to 400°F. Cook bacon in a large skillet over medium-high heat 6 minutes or until crisp. Crumble bacon.
- Place tortillas on a large baking sheet coated with cooking spray. Top half of each tortilla with bacon, spinach, and cheese. Fold tortillas in half. Coat tortillas with cooking spray.
- Bake 6 minutes, and flip. Bake 6 minutes longer or until tortillas are browned and cheese melts. Cut into wedges, and serve with pico de gallo.
Side Dish Ingredients
- 1 (12-oz) pkg frozen corn kernels, thawed
- 2 Tbsp olive oil
- 1 (4-oz) can diced green chiles
- ½ tsp ground cumin
- ½ cup chopped fresh cilantro
Side Dish Instructions
- Cook corn in hot oil in a large skillet 8 minutes or until browned. Stir in chiles and cumin; cook 3 minutes or until thoroughly heated. Sprinkle with cilantro.
