BLT Quesadillas

Cilantro-Chile Corn

Ingredients

  • 12 slices center cut bacon
  • 6 burrito-size flour tortillas
  • 3 cups baby spinach 
  • 1 (8-oz) pkg shredded mozzarella cheese
  • 1 cup refrigerated salsa, drained (or use pico de gallo)

Instructions

  1. Preheat oven to 400°F. Cook bacon in a large skillet over medium-high heat 6 minutes or until crisp. Crumble bacon.
  2. Place tortillas on a large baking sheet coated with cooking spray. Top half of each tortilla with bacon, spinach, and cheese. Fold tortillas in half. Coat tortillas with cooking spray.
  3. Bake 6 minutes, and flip. Bake 6 minutes longer or until tortillas are browned and cheese melts. Cut into wedges, and serve with pico de gallo.

Side Dish Ingredients

  • 1 (12-oz) pkg frozen corn kernels, thawed
  • 2 Tbsp olive oil
  • 1 (4-oz) can diced green chiles
  • ½ tsp ground cumin
  • ½ cup chopped fresh cilantro

Side Dish Instructions

  1. Cook corn in hot oil in a large skillet 8 minutes or until browned. Stir in chiles and cumin; cook 3 minutes or until thoroughly heated. Sprinkle with cilantro.
