Butter Chicken Meatballs

Ingredients

  • 2 large eggs
  • 3 cloves garlic, minced
  • 2 Tbsp smoked paprika (or use regular)
  • ¼ tsp salt
  • 2 lb ground chicken
  • 1½ cups panko breadcrumbs
  • 1½ (15-oz) jars butter chicken simmer sauce
  • ⅓ cup chopped fresh cilantro

Instructions

  1. Preheat oven to 425°F. Whisk together eggs, garlic, paprika, and salt in a large bowl. Add chicken and breadcrumbs; gently mix together using your hands.
  2. Roll chicken mixture into 1½-inch balls. Place on two large greased rimmed baking sheets.
  3. Bake 10 minutes or until meatballs are no longer pink in center, shaking pans after 5 minutes.
  4. Meanwhile, heat simmer sauce until warm. Serve over meatballs. Sprinkle with cilantro.
