Sausage-Chickpea Pasta

Ingredients

  • 12 oz spaghetti
  • 1 lb Italian ground pork sausage
  • 1 (15.5-oz) can chickpeas, drained and rinsed
  • 2 Tbsp minced garlic
  • 1 (23-oz) jar marinara sauce
  • 2 tsp paprika
  • ½ (10-oz) pkg spinach (or use kale)

Instructions

  1. Cook pasta according to package directions.
  2. Meanwhile, cook sausage and chickpeas in a large skillet over medium-high heat 6 to 8 minutes or until sausage is browned and crumbly. Drain, if needed.
  3. Add garlic; cook 1 minute or until fragrant. Stir in marinara sauce and paprika; reduce heat to medium, and simmer 10 minutes or until sauce begins to thicken.
  4. Add spinach; stir until wilted. Serve sauce over pasta.
