Ingredients

  • ½ lb boneless pork loin chops, halved lengthwise
  • 1 large egg, lightly beaten
  • ½ cup whole wheat panko breadcrumbs
  • 1 Tbsp olive oil
  • ⅛ tsp salt
  • ⅛ tsp pepper
  • 1 lemon, cut into wedges
  • 2 Tbsp chopped fresh parsley

Instructions

  1. Pound pork chops to ¼-inch thickness in a zip-top plastic bag using the heel of your hand. Dip pork in egg, and dredge in breadcrumbs, pressing gently to adhere.
  2. Cook pork in hot oil in a nonstick skillet over medium heat 2 to 3 minutes per side or until golden brown and done.
  3. Sprinkle with salt and pepper while warm; squeeze lemon juice over pork, and sprinkle with parsley.

  • 3 cups thinly sliced red cabbage
  • 1 Tbsp olive oil
  • 2 Tbsp balsamic vinegar
  • 2 Tbsp low-sodium chicken broth
  • 1 Tbsp honey
  • ¼ tsp salt
  • ¼ tsp pepper
  • 1 (12-oz) pkg thin green beans

Side Dish Instructions

  1. Sauté cabbage in hot oil in a Dutch oven over medium heat 5 minutes or until wilted.
  2. Combine vinegar, broth, and honey; add to cabbage. Cover, reduce heat, and simmer 30 minutes, stirring often; stir in salt and pepper.
  3. Steam green beans according to package directions.
