Pork Schnitzel
Sweet and Sour Red Cabbage and Steamed Green BeansWine Recommendation

Ingredients
- ½ lb boneless pork loin chops, halved lengthwise
- 1 large egg, lightly beaten
- ½ cup whole wheat panko breadcrumbs
- 1 Tbsp olive oil
- ⅛ tsp salt
- ⅛ tsp pepper
- 1 lemon, cut into wedges
- 2 Tbsp chopped fresh parsley
Instructions
- Pound pork chops to ¼-inch thickness in a zip-top plastic bag using the heel of your hand. Dip pork in egg, and dredge in breadcrumbs, pressing gently to adhere.
- Cook pork in hot oil in a nonstick skillet over medium heat 2 to 3 minutes per side or until golden brown and done.
- Sprinkle with salt and pepper while warm; squeeze lemon juice over pork, and sprinkle with parsley.

- 3 cups thinly sliced red cabbage
- 1 Tbsp olive oil
- 2 Tbsp balsamic vinegar
- 2 Tbsp low-sodium chicken broth
- 1 Tbsp honey
- ¼ tsp salt
- ¼ tsp pepper
- 1 (12-oz) pkg thin green beans
Side Dish Instructions
- Sauté cabbage in hot oil in a Dutch oven over medium heat 5 minutes or until wilted.
- Combine vinegar, broth, and honey; add to cabbage. Cover, reduce heat, and simmer 30 minutes, stirring often; stir in salt and pepper.
- Steam green beans according to package directions.
