Southern Pork and Tomato Grilled Cheese Sandwiches

Ingredients

  • 1 (16-oz) pkg bacon
  • 12 slices home-style white bread
  • 12 slices smoked Cheddar cheese
  • 1½ lb chopped smoked pork
  • 1 cup barbecue sauce
  • 2 tomatoes, thinly sliced
  • Quick Pickled Red Onions
  • ½ cup butter, softened
  • 1 (5-oz) pkg baby arugula
  • Quick Pickled Red Onions:
  • 1 cup apple cider vinegar
  • 1 Tbsp honey
  • 1 tsp kosher salt
  • 1 large red onion, thinly sliced

Instructions

  1. Cook bacon in a large skillet over medium heat until crisp; drain on paper towels.
  2. Top half of bread slices each with 1 slice cheese; top with pork, and drizzle with barbecue sauce .
  3. Top with tomato slices, desired amount of Quick Pickled Red Onions, and bacon.
  4. Place remaining cheese slices over bacon; cover with remaining bread slices.
  5. Spread softened butter on outsides of sandwiches.
  6. Cook sandwiches, in batches, in a large nonstick skillet over medium-low heat 4 to 5 minutes per side or until bread is toasted and cheese is melted.
  7. Separate bread slices, and add arugula to each sandwich.
  8. For Quick Pickled Red Onions:.
  9. Combine vinegar, honey, and salt in a medium-size bowl; add onion. Cover and let stand 1 hour or store, covered, in refrigerator up to 2 weeks.
