Classic Favorite
Southern Pork and Tomato Grilled Cheese Sandwiches
Ingredients
- 1 (16-oz) pkg bacon
- 12 slices home-style white bread
- 12 slices smoked Cheddar cheese
- 1½ lb chopped smoked pork
- 1 cup barbecue sauce
- 2 tomatoes, thinly sliced
- Quick Pickled Red Onions
- ½ cup butter, softened
- 1 (5-oz) pkg baby arugula
- Quick Pickled Red Onions:
- 1 cup apple cider vinegar
- 1 Tbsp honey
- 1 tsp kosher salt
- 1 large red onion, thinly sliced
Instructions
- Cook bacon in a large skillet over medium heat until crisp; drain on paper towels.
- Top half of bread slices each with 1 slice cheese; top with pork, and drizzle with barbecue sauce .
- Top with tomato slices, desired amount of Quick Pickled Red Onions, and bacon.
- Place remaining cheese slices over bacon; cover with remaining bread slices.
- Spread softened butter on outsides of sandwiches.
- Cook sandwiches, in batches, in a large nonstick skillet over medium-low heat 4 to 5 minutes per side or until bread is toasted and cheese is melted.
- Separate bread slices, and add arugula to each sandwich.
- For Quick Pickled Red Onions:.
- Combine vinegar, honey, and salt in a medium-size bowl; add onion. Cover and let stand 1 hour or store, covered, in refrigerator up to 2 weeks.
