Loaded Taco Grilled Cheese

Ingredients

  • 1 lb ground beef
  • 1 (1-oz) envelope taco seasoning mix
  • ⅓ cup water
  • 12 thick slices sourdough or jalapeño cheese bread
  • 12 slices pepper-Jack cheese
  • 3 avocados, thinly sliced
  • 2 tomatoes, thinly sliced
  • 6 green onions, thinly sliced
  • ½ cup butter, softened
  • Lime-Chipotle Sauce:
  • 1 cup mayonnaise
  • ½ cup sour cream
  • 1 Tbsp fresh lime juice
  • ½ tsp ground chipotle chile pepper

Instructions

  1. Cook beef in a large skillet over medium heat until beef is browned and crumbly; drain and return to skillet.
  2. Add taco seasoning mix and water to skillet; cook over medium heat until beef mixture is thickened and most of liquid is evaporated.
  3. Top half of bread slices each with 1 cheese slice and desired amount of taco meat.
  4. Arrange avocado slices, tomato slices, and onions over meat. Top with remaining cheese slices. Cover with remaining bread slices.
  5. Spread softened butter on outsides of sandwiches.
  6. Cook sandwiches in a large nonstick skillet over medium-low heat 4 to 5 minutes per side or until bread is toasted and cheese is melted.
  7. Serve with Lime-Chipotle Sauce for dipping.
  8. For Lime-Chipotle Sauce: Stir together mayonnaise, sour cream, lime juice, and chile pepper. Store, covered, in refrigerator up to 3 days.
