Loaded Taco Grilled Cheese

Ingredients
- 1 lb ground beef
- 1 (1-oz) envelope taco seasoning mix
- ⅓ cup water
- 12 thick slices sourdough or jalapeño cheese bread
- 12 slices pepper-Jack cheese
- 3 avocados, thinly sliced
- 2 tomatoes, thinly sliced
- 6 green onions, thinly sliced
- ½ cup butter, softened
- Lime-Chipotle Sauce:
- 1 cup mayonnaise
- ½ cup sour cream
- 1 Tbsp fresh lime juice
- ½ tsp ground chipotle chile pepper
Instructions
- Cook beef in a large skillet over medium heat until beef is browned and crumbly; drain and return to skillet.
- Add taco seasoning mix and water to skillet; cook over medium heat until beef mixture is thickened and most of liquid is evaporated.
- Top half of bread slices each with 1 cheese slice and desired amount of taco meat.
- Arrange avocado slices, tomato slices, and onions over meat. Top with remaining cheese slices. Cover with remaining bread slices.
- Spread softened butter on outsides of sandwiches.
- Cook sandwiches in a large nonstick skillet over medium-low heat 4 to 5 minutes per side or until bread is toasted and cheese is melted.
- Serve with Lime-Chipotle Sauce for dipping.
- For Lime-Chipotle Sauce: Stir together mayonnaise, sour cream, lime juice, and chile pepper. Store, covered, in refrigerator up to 3 days.
